Ingredients:
Chicken - 250 g
Bombay onion - 1
Green chilli - 2
Tomato - 1
Ginger garlic paste - 1 tbsp.
Curry leaves - few
Pandon leaf - small piece
Red chilli powder - 3 tsp.
Curry powder - 1&1/2 tsp.
Fenugreek - 1/2 tsp.
Turmeric - 1/4 tsp.
Pepper - 1/2 tsp.
Salt - 2 tsp.
Cloves - 2
Cardamom - 2
Cinnamon stick - small piece
Vegetable oil (or coconut oil) - 1 tbsp.
Water - 2 cups
Thick coconut milk (Optional) - 1 tbsp.
Method:
1. Cut the chicken into medium size pieces.
2. Wash it thoroughly. Use bit of turmeric and salt for washing too.
3. Prepare the ingredients as mentioned in the list.
4. Heat the pan and add oil. When oil is hot enough, add fenugreek, clove, cardamom and cinnamon and sauté for few seconds. Then add the onion and fry till onion turns golden brown in colour.
5. Next add ginger garlic paste. Sauté until aroma of the paste comes out. Then add curry leaves, green chillies and tomato.
6. When tomato soften well, add the chicken pieces with salt into the pan.
7. Fry the chicken until everything dries out from the pan.
8. Mix rest of the spices in the water and add the mixture into chicken. Cover it and simmer it for 30 min.
9. When gravy thicken, add coconut milk. When it is boiling, remove from the heat.
